Grape is not only thing that can be raw material in the wine making process, as a matter of fact. In Bali, which areas are blessed with tropical fruits, the community supervised by the environmental organization has ever tried to create Salak (Snake Skin Fruit) wine containing 7 % alcohol. Lately, agricultural department of Udayana University successfully create sweet wine from red sweet potato.

Traditionally, Balinese didn’t eat red sweet potato due to its weird color. This kind of root was usually eaten by the monkeys. But today’s technology and research has revealed that red sweet potato is safe to be consumed. Even red sweet potato contains anti-oxidant anthocyanin which is so good for health that people began to process it to be ice cream, cake, bread, syrup and for sure wine.

Wine for Balinese is something upscale that is usually consumed by foreigners besides Balinese don’t really like its alcoholic bitter taste and high price. But local also don’t know about the positive effect to the body of consuming wine in the right dose. By the presence of red sweet wine made from red potato, the locals can enjoy the relaxing effects and also good flavor which has been adapted to their taste. Some locals who have tasted it admittedly say that after consuming a half glass of this sweet wine they feel so relaxed that they can have quality slumber.

Dewa Ngurah Suprapta

This sweet wine which contains 4% alcohol is a brilliant invention of Dewa Ngurah Suprapta, a dedicated lecturer at Udayana University. He uses only selected red sweet potato planted by the locals to keep good quality. In the meantime, he adopt the making process of arak Bali (alcoholic liquid which is important stuff at traditional ceremony in Bali) which is coupled with modern technology to create best quality of sweet wine. The sugar level or Brix degree of this wine is up to 12% that both locals and foreigners can enjoy it.
