Pan Suweca’s Roasted Chicken

Are you food lovers? So you have to try this Balinese new recipe. Pan Suweca, a restaurant located at Bedugul Street, Sidakarya, Denpasar, will serve you special chicken dishes as its specialty. From his talented hands a different tasty meal was created, named roasted suckling chicken or Balinese familiar with Ayam Guling. This meal is categorized as a new dishes since only pig is suckled and roasted by Balinese before.

Similar to roasted suckling pig this meal uses the same spices and cooked in the same way with roasted suckling pig. First, the spices such as garlic, onion, citronella/lemongrass, and others Balinese spices are pounded. Then that pounded spices mix with cassava leaves. The chef put the mixture into chicken abdomen that its internal organ has been taken out and cleaned. That chicken is ready to be roasted.

Vegetarian ‘Lawar’

Have you ever tasted Lawar – Balinese traditional food? Lawar is one of the most favorite foods after roasted pork in Bali which contains pork, green jackfruit, grated coconut, frying oil, coconut milk, citrus leaf, and complete Balinese spices (turmeric, ‘kencur’ (kaempferia galangal), ginger, pepper, ‘kemiri’ (candlenut), ‘ketumbar’ (corriandrum sativum), ‘pala’ (myristica fragrans), brown coconut tree, ‘jangu’, salt, and lime), chilies, onion, and garlic.

Lawar was usually made one day before the Galungan day (Christmas a la Balinese), it is called ‘Penampahan day’. The pig is slaughtered as the symbol of killing the animal’s nature in the human individuality, so it was not consumed every time and every where. But with the passing of the time as the development of the tourism sector it becomes one of the daily cuisines.

Babi Guling

Babi Guling (Suckling Pig) may be the most famous Balinese cuisine. Babi Guling is a whole baby pig prepared over an open, corn husk fire. A long stick is inserted through the pig’s body from one end to the other after it is flavored, inside and out, with chopped spices that include shallots, garlic, ginger, turmeric, galangal, pepper coriander, candlenuts, chilies, lemon grass and lots of whole cassava leaves.

The cassava leaves spread the spices evenly while the pig is being slowly grilled.

When this delicious treat is fully cooked, the meat is cut into small portions for serving. Babi Guling is served in many food stalls restaurants throughout Bali and is a huge favorite.

When you order Babi Guling it usually comes served with a couple of side dishes…always a pleasant surprise.
